Stacy's Chocolate Chip Cake


FIRST RECIPE YEAH!
Someones birthday is coming up, and they requested I make something- anything- with LOTS of chocolate. I've made this cake before and it was fabulous- yellow cake with shaved German chocolate and chocolate chips... pretty much heaven in a cake. I got the recipe from the Cake Doctor cookbook. So, here it goes....

Ingredients:
1 bar (4 oz) German Chocolate
1 package yellow
cake mix
1 package vanilla instant pudding mix
1 cup milk
1 cup vegetable oil
4 large eggs
1 package (1 cup) semisweet chocolate chips

Preparation:
1. Place a rack in the center of the oven and preheat to 325 degrees. Lightly mist 10 in tube pan (or 3 eight in loaf pans) with vegetable oil spray, then dust with flour. (I used the spray with flour in it- works like magic)

2. Break German chocolate bar into four pieces. Grate the bar us in
g a food processor or hand grater until the bar is finely grated. If using the food processor, insert the steel blade and drop the chocolate pieces into the processor one at a time.

I decided to use a
hand grater. If you have a food processor, I highly recommend you use it. This. Was. A. Pain.




Once the hard work was finished....






3. Place all the ingredients except the grated chocolate and chocolate chips in a large mixing bowl. Blend with an electric mixer on low speed for one minute.
As you can see, I didn't use a mixer. It turned out fine and it was a lot easier to clean.

4. Stop the machine, fold in the grated chocolate. Increase the mixer speed to medium and beat 2 minutes more. Fold in the chocolate chips.








5. Pour the batter into the prepared pan, smoothing it out with a rubber spatula and place in the oven.
6. Bake the cake until it's golden brown and springs back lightly when pressed with your finger, 58 to 60 mins for tube pan (50 to 52 mins for loaf pans). Once you remove it from the oven, place on cooling wrack and cool for about 20 mins, then serve.
P.S.- You can store this in foil for up to one week and freeze for up to 6 months.
